Potato mousseline

Ingredients
- 1 kg floury potatoes
- 100 grams butter
- 200 grams milk
- 1/2 tsp salt
- 1/2 tsp pepper
Instructions
Sting the potatoes with a fork. Bake the potatoes on a bed of salt at 200°C for 45 minutes.
While hot, rub the potatoes through a sieve.
Melt the butter in the milk. Mix the potatoes with the milk and butter. Add the salt and pepper.
Serve with a little bit of extra butter on top.
